Monterey Potato Platter
Quick Description
Made this for dinner tonight and it was better than I expected. Two thumbs up and super easy!
Recipe from Bea Durfee in the "Almo School Cookbook".
The Recipe
3-4 medium baking potatoes
1/2 lb. ground beef
1/2 c. picante sauce
2 tsp. chili sauce
1/2 tsp. salt
1/2 c. chopped fresh tomatoes
1 c. shredded cheese
shredded lettuce (optional)
sour cream (optional)
Cut potatoes into 1/4 inch slices (I just cut mine french fry style). Place on lightly greased cookie sheet or 9x13 baking dish. Brush potatoes with butter. Bake 400 degrees, 30-35 mins until tender, turning after evert 15 mins.
Brown the ground beef. Add picante sauce, chili sauce, and salt. Simmer 5 mins.
Top potatoes with meat mixture, chopped tomatoes, and cheese. Broil until cheese is melted.
Salt and pepper to taste. Serve with lettuce and sour cream if desired. The kids liked thiers with Ranch dressing.
